Italian recipes: Organic Casarecce with black cabbage pesto sauce
Ingredients for 3 people:
300 gr. Organic Casarecce
Black cabbage leaves
Parmigiano cheese
Pecorino cheese
Chopped almonds
1 clove of garlic
Extra virgin olive oil (EVO)
Preparation:
Select the tender leaves of the cabbage and wash them.
Dry and put them in a mortar.
Add the salt and crush the leaves with a pestle until they are reduced to mush.
Add the garlic and the chopped almonds. Pour a little ‘oil and continue to beat.
Add the grated cheese until it reaches the desired consistency and taste. In the meantime, proceed with cooking the pasta in salted water.
Drain and mix with the pesto sauce.
