I chose it because it has a flavor that I adore, especially because it reminds me of my childhood, when we used to have yellow risotto, riso alla milanese. This saffron is quite special because it is produced by a young Milanese farmer just outside Milan, demonstrating that Milanese land has also given us a truly exceptional product.
This exemplifies this farmer’s hard work: all three pistils have been kept intact… Let me tell you that this is very hard to achieve – it takes huge efforts, hard work, and, above all, passion”; as to the opportunity that Expo represents for Milan and for Italy “This Expo is an excellent opportunity which we chefs must really take with both hands, because it will be a window onto the world from which we can finally show that there is a quality product, a quality chef that fulfills, a quality farmer that produces.
